SINGAPORE – Among Wan Hao Chinese Restaurant’s range of new Chinese New Year items is the show-stopping Tea Smoked Grain-Fed Duck ($78 for half, $138 for whole, available for dine-in and takeaway).
The duck is marinated, then air-dried for 24 hours before it is smoked in a mix of osmanthus, long jing tea leaves and sugarcane. This imparts a gentle fragrance to the succulent meat, while the crisp, golden skin shatters on my first bite.
The restaurant also reprises its signature pen cai offerings (from $558++ for five people), including the Wan Hao Bird’s Nest Eight Treasures Pot, part of the Celebrations of Abundance set menu ($268.80++ a person, minimum five people to dine).
Other set menus start at $138.80++ a person for a six-course meal, minimum four people to dine.
For fans of its delicious nian gao tarts ($38 for a box of eight), the latest addition is the Golden Nian Gao Tarts with Salted Egg and Mung Bean Paste – reminiscent of a tau sar piah. This flavour joins the other nian gao tarts made with pandan, gula melaka and grated coconut; yuzu chocolate; and my favourite with yam paste.
For a salted egg spin on the traditional pineapple tart, try the new Signature Salted Egg Golden Nuggets ($48 for a 300g jar).
The buttery pastry is infused with salted egg and curry leaves, making for a more savoury option, to offset the sweetness from the pineapple filling.
