SINGAPORE - Some restaurant or hotel chefs who were laid off or furloughed during the pandemic have struck out on their own.

When Italian restaurant Modesto's closed its two outlets here in the middle of last year, its group head, chef Eric Cheah, and his former colleagues set up Eric's Bistro in Tanjong Pagar, serving Italian and local food.
