SINGAPORE – With just five weeks until Mid-Autumn Festival on Oct 6, chefs are gearing up for the annual mooncake mania ahead.
Several are already accepting online orders, with early-bird discounts still available. Physical mooncake fairs will commence islandwide in September, with the highly anticipated one by Takashimaya Department Store starting on Sept 4.
New to the annual feasting frenzy are some high-end stand-alone restaurants, which are muscling in on the mooncake action.
The new collaboration to look out for is one with Singapore’s one-Michelin-starred Restaurant Born in Neil Road and three Thai Michelin-starred establishments.
It is presented by award-winning Thai chef Dej Kewkacha, most recently named Asia’s Best Pastry Chef by The World’s 50 Best Restaurants.
Made in Bangkok, the set of four mooncakes represents each restaurant, featuring flavours such as salted egg, coconut and mulberries.
Chef Dej, who has cooked with Restaurant Born’s chef Zor Tan for many years, says: “This is a collaboration built across borders. The challenge is in translating each chef’s voice into the form of a mooncake, a completely new medium for most of us. That process pushed us to think differently about textures and flavours.”
Others making mooncake debuts are one-Michelin-starred Peranakan restaurant Candlenut, as well as Chinese restaurants The Black Pearl and Mansion 7.
Flavour-wise, there is nothing too outlandish.
In fact, many still tap familiar fruit, tea, local and Asian ingredients such as black sesame, yuzu and pandan, which is an ingredient in chendol-inspired mooncakes.
But if you are looking for the most trendy of the lot, it has to be the crop of mooncakes inspired by Dubai’s viral pistachio kunafa chocolate, typically made with crisp shredded filo pastry dough (kataifi) and crushed pistachios.

Restaurant Born collaboration
The Harvest of Happiness mooncake collection is conceptualised by the chefs of Michelin-starred establishments in Thailand and Singapore.

Score the Harvest of Happiness collection ($50 nett till Aug 31, $65 nett for four from Sept 1) of baked mooncakes conceptualised by the chefs of four Michelin-starred establishments – one from Singapore and three from Thailand. Each restaurant has created one flavour.
Representing Singapore is the one-Michelin-starred Restaurant Born, which has crafted a Midnight Ember mooncake with a molten salted egg centre encased in a crisp cookie exterior.
The Bangkok restaurants are Le Du, offering a Twilight Bloom mooncake with deep berry hues of roselle flower intertwined with the freshness of mulberries; Potong, whose White Moon showcases rich coconut cream contrasted with textures of sun-dried coconut flakes; and Suhring, whose Moonlit Eclipse is made with a coconut centre encased in a mocha crust.

Candlenut’s limited-edition Bespoke Tea Mooncakes.

One-Michelin-starred Peranakan restaurant Candlenut’s limited-edition Bespoke Tea Mooncake is made of lotus paste infused with its signature tea blend of jasmine, oolong, pandan and lemongrass. The baked mooncakes – designed like traditional Peranakan tiles – are priced at $50 nett for a pair.
