SINGAPORE – If you have yet to try Si Chuan Dou Hua Restaurant’s signature fugu yusheng, this is your sign to do so.

The Chinese restaurant chain – known for pioneering Sichuan cuisine in Singapore – marks its 30th anniversary in 2026 with an array of Chinese New Year specialities to welcome the Year of the Horse.

Exclusive to its UOB Plaza outlet is the Prosperity Sturgeon Caviar and Fugu Yusheng with Organic Fresh Greens ($218++, $198++ without caviar), which comes with a platter of Japan-imported fugu sashimi elegantly shaped as a horse’s head.

The refreshing salad is complemented with a tangy balsamic honey dressing.

Prices start at $98++ for a Prosperity Smoked Salmon Yusheng with Organic Fresh Greens.

The pufferfish is showcased in a second way – Double-Boiled Fugu Soup with Moutai baijiu, simmered for over eight hours with the fugu’s fin that has been soaked in Kweichow Moutai “Golden Prince” baijiu.

Another standout dish is the Steamed Live Abalone with Kurobuta Pork Belly and Salted Threadfin – a unique surf and turf combo enhanced by the salty notes of the threadfin. This dish is part of Harmony set menu D, priced at $238++ a person (minimum two people to dine).
