The first time, as a child, I accompanied my late grandmother to the wet market in Tanglin Halt, two things confounded me: the terrific speed with which the stallholders moved, and how no order slipped past them.

My favourite part of our visits was witnessing a stallholder whip up my grandmother’s order of curry blend with a colourful array of spices, meticulously scooping a spoonful of each spice.
