Soon kueh is a popular and relatively cheap Teochew snack that makes a great breakfast or afternoon treat.
Soon is Teochew for bamboo shoot and, traditionally, that was the main ingredient for the dumpling-like kueh. Grated vegetables are cooked with dried shrimp, then wrapped in a thin rice flour skin and steamed.
