Singapore's Michelin-starred restaurants: All you need to know

Twenty-two eateries, including Hill Street Tai Hwa Pork Noodles and Hong Kong Soya Sauce Chicken Rice & Noodle, were awarded one Michelin star in a gala ceremony at the Resorts World Sentosa on Thursday (July 21) evening. 

Six restaurants each earned two Michelin stars and celebrated chef Joel Robuchon, whose restaurants have already earned 25 Michelin stars, can now claim another three for his Restaurant Joel Robuchon. 

Here is a guide to the restaurants. 

One Michelin Star

Signature dish: Wagyu Au Poivre Vert - Australian Blackmore wagyu striploin is gently cooked in a combination of beef jus and wagyu fat. It is then grilled and smoked, and served with a concentrated ginger and pepper infused beef glaze, Chinese mustard gremolata and an assortment of pepper berries, including the seasonal sansho pepper from Japan.

Signature Dish: The Lemon Tart is a play on a classic lemon tart with a basil sorbet core, lemon curd and lemon espuma over a sable breton. The acidity from the citrus is balanced by the freshness from the basil sorbet for a light delicate finish to a meal.

Signature Dish: Chen’s Mapo Doufu, an original Chen family recipe using doubanjiang (chilli broad bean paste) that is fermented for three years. The tofu is stir-fried in hot Sichuan pepper-flavoured meat sauce, and thee end result is a soft and silky tofu dish that is best enjoyed when paired with a bowl of fragrant Hokkaido rice.

Signature dish: Beef châteaubriand and foie gras, "Rossini" style -  a ballotine of roasted medium rare beef tenderloin and foie gras with truffles, port wine reduction and beef jus. The dish is also served with pommes soufflées which are puffy slices of deep-fried potato. It takes five hours to prepare this dish.
