Kumamoto-style Japanese Noodles At Menya Kokoro

Japanese maze-soba chain Menya Kokoro introduces Kumamoto-style Japanese noodles - a healthier alternative to the usual ramen - made from glass noodles which are low in carbohydrates and fat-and gluten-free. Dishes with the Kumamoto-style noodles include the new Miso Moyashi Ramen ($11.80), Chashu Ramen ($12.30), Ajitama Ramen ($11.80) and Kokoro Tan Tan Men ($13.80).

Kin Chinese New Year Specials: The Five Blessings

Kin's "The Five Blessings" highlights five specialities that hold a special place in chef Damian D'Silva's heart and are fixtures at the family table. One dish features Hati Babi Bungkus ($30), comprising minced pork, coriander and liver patties with housemade spices and Sarawak white pepper; artfully wrapped in caul fat that is steamed and then grilled over charcoal to crisp the outside, while keeping the inside moist and fragrant. Kin's Lo Hei ($88 for four people, $188 for 10) is a raw fish salad of Japanese yellowtail, shredded white radish, carrot twirls, fresh pomelo pulp and golden crackers.

Yusheng With Contemporary Italian Flair At Zafferano

Head chef Andrea De Paola has created a classic yusheng with contemporary Italian flair. A mix of shredded vegetables - carrot, daikon, green radish, beetroot, celeriac and capsicum - is topped with pickled ginger, candied Amalfi lemon and balsamic vinegar-marinated onion. The dish is adorned with saffron crackers and freshly shaved black truffle, served with hamachi carpaccio and Hokkaido scallop carpaccio, and dressed with a trio of sauces - sesame seaweed, plum, and black truffle and honey.

Sushi Deli Fa Cai Yu Sheng

Boasting 10 elements, Sushi Deli 's yusheng comprises locally made ingredients such as shredded melon, red ginger shreds, sweetened wax gourd strips, leek strips, pickled vegetables and freshly prepared tri-coloured radish shreds. These colourful elements are topped with slices of salmon sashimi and garnished with roasted sesame seeds and a drizzle of sweet fish sauce. Po's Lunar New Year Specials

Toss your way to a prosperous year with Po Hei ($68 for two to four people or $88 for four to six), which features Po's signature Barramundi Salad - a tart, tangy raw fish salad with champagne jelly, flaxseed and candied walnuts. The Silk Hen Broth ($12 a person) is a chicken collagen soup with bamboo pith, baby spinach and wolfberries.

The King Crab Carrot Cake ($20) packs chunks of Alaskan king crab meat, which is best enjoyed with Po's housemade XO chilli sauce.

The Steamed Dragon Tiger Grouper ($78) has a firm but smooth, almost melt-in-your-mouth texture.
