SINGAPORE – When it comes to planning for Chinese New Year, not only do I stock up on steamboat ingredients, but the condiments are also of utmost importance.
My latest pantry additions are two newly launched mala sauces from wagyu beef bowl specialist Waa Cow!.
One is a mala dipping sauce ($12.90 for a 150ml bottle), a creamy blend of mala spices and sesame sauce. It is good enough on its own or you can jazz it up with coriander and garlic.
The other sauce (from $38.80 for two 200ml packets, includes recipe cards) is beefed up with premium wagyu beef fat and is best suited for a hotpot soup base, meat marinade or stir-fry – think mala xiang guo-style.
These versatile sauces are made in collaboration with chef Mandy Kee, a MasterChef Singapore Season 4 finalist, who was inspired by her travels in Chongqing, China, to use beef fat for the broth base – very on brand with Waa Cow!.
I like that the beef flavour is not overpowering and the mala spice level not too overwhelming.
