Food Picks: Tongue-tingling treats at AP Cafe

SINGAPORE – It seems to be the rage among high-end car, fashion and watch brands these days – build a flagship store or boutique, and have a restaurant and cafe in it.

One of the latest to do this is luxury Swiss watch brand Audemars Piguet, which opened AP House at Raffles Hotel’s Bar & Billiard Room in January 2025. While there are AP Houses in cities such as Tokyo, New York and London, AP House Singapore is the only one with a cafe – and it is open to the public.

Far from being a vanity project, AP Cafe serves food I would gladly go back for. Bricelets ($5) are very thin and crisp savoury Swiss waffles that come in different flavours and are great with drinks. The not-too-sweet Strawberry Milk Punch ($26), with gin, strawberry, bergamot, white chocolate and clarified milk, is a great one to order.

Two other savoury offerings stand out. The first is Spiced Beef Tartare ($25), served with fried wonton skins. Hand-chopped Australian wagyu beef tenderloin is dressed with sriracha chilli and soy-cured egg yolk. It is just spicy enough to make my tongue tingle, but not bring on a full-on palate meltdown.

Chicken Rice Club Sandwich ($22) features a tangy, very legit chilli dip. The roasted chicken breast in the sandwich retains its juiciness, with added help from aioli, ginger and chilli. I so want a jar of that housemade chilli dip.

Among the sweet offerings, Swiss Roll, Honey Comb and Honey Ice Cream ($18) stands out because of the terrific housemade honey ice cream. The pillowy cake, rolled up with chestnut puree and white chocolate Chantilly cream, gets a textural contrast from the crisp honeycomb served alongside.
