SINGAPORE – Hidden bar concepts are all the rage and now restaurants are following suit. 

Enter Imperial Treasure Restaurant Group’s new grill concept, Imperial Treasure Bar + Grill, located inside the Imperial Treasure Cantonese Cuisine restaurant at Great World. 

I meander through the corridors to a 28-seat counter that faces an open kitchen, where the grill magic happens. 

As the name suggests, the focus is on grilled skewers – meat, seafood and vegetables – meant to be paired with an extensive wine and spirits selection. 

It is not quite yakitori nor is it heavily seasoned China-style barbecued skewers. Here, the ingredients are lightly glazed with oyster sauce, Japanese barbecue sauce or simply salt.

One standout item from both set menus is the more unusual grilled duck’s chin – a surprisingly juicy and flavoursome item that I lick clean to the bone. 

The six-head abalone, plump oyster and quail drumstick (from the $108++ menu) are also grilled to succulent perfection.

The sets end on a high with mee sua in thick chicken broth – reminiscent of Imperial Treasure’s delicious soups – as well as black glutinous rice pudding and osmanthus jelly with wolfberries for dessert

All set menu items are available on the a la carte menu.  

The non-alcoholic sparkling tea options (from $10) pair well with the food too. If you are looking to splurge, the fragrant Dragon Pearl Jasmine tea ($88 for a 750ml bottle) – by Hong Kong brand Mindful Sparks – is one of the best sparkling teas I have had. 

There is a 25 per cent discount till Oct 31 on food and selected drinks, in line with its opening.
