Food Picks: M&T’s Comte croque monsieur is a classic with a twist

SINGAPORE – The Croque Monsieur, that classic French ham and cheese sandwich, is traditionally made with Gruyere cheese. M&T, a new French cheese boutique and bistro, uses artisanal Comte instead and to great effect.
A French dairy co-operative representing more than 8,500 farms is behind M&T, short for Monts & Terroirs. It offers a wide selection of Comte with different flavour profiles – vegetal, fruity and roasted, among them – and aged for different lengths of time.
Cheese experts are on hand to give advice about what cheeses to buy, but the best way to sample its wares is to have a meal at the bistro.
The cheese, along with others such as Fourme d’Ambert and Abondance, find their way into the dishes. And the Croque Monsieur ($18) is terrific.
It lives up to the “croque” or crunch in the name and is not too rich, despite being stuffed with ham, Comte and bechamel made with more Comte. There is a faint nuttiness to the cheese that hooks me at first bite. The bread is not sliced too thick, so you can appreciate the full glory of the cheese and ham.
Served alongside is a mesclun salad, dressed with just the right amount of balsamic vinaigrette to stave off a food coma.
