SINGAPORE – Eggslut may have exited the Singapore market, but soft, silky scrambled eggs are still very much in vogue. Except that instead of stuffing it between two buns, the trendy thing now is to have it over a warm bowl of rice. 

If you are craving the Thai version of the dish, Running Egg now has two outlets in Singapore selling its version of the viral dish from Bangkok’s Hereduan eatery.

For something more in the vein of what you might find in the cha chaan tengs of Hong Kong, check out Lo Hey HK Seafood. Its lunch menu, rolled out in February, is centred on two main offerings: scrambled eggs on rice and handmade noodles cooked typhoon shelter style – that is, with lots of crispy garlic, golden breadcrumbs and fried seafood. 

The rice bowl comes with one of four toppings: clams ($10.80), prawn balls ($9.80), beef slices ($10.80) and crab meat ($11.80). I cannot vouch for the rest, but the crab meat option, at least, makes for a tasty, straightforward lunch. 

Crab and egg have always paired well together and they slip right back into that natural camaraderie here. The pillowy folds of egg have been scrambled here with milk for a creamier finish and are laced with lashings of crab that lend it a gentle briny sweetness.

The noodles, with their QQ bounce and garlicky soya coat, also make for a satisfying single-person meal. They can be tossed with lobster ($18.80), prawn balls ($11.80), fried chicken ($9.80) or pork ribs ($10.80). 

The lunch specials go light on the greens, however, so you might want to order a plate of vegetables from the a la carte menu to balance your meal. The claypot choy sum ($18.80), for instance, masks its natural bitterness with a sizzling heap of aromatic agents – Tai O shrimp paste, chillies, garlic and, most importantly, lots of crisp, crackling lard.
