SINGAPORE – JM Noodle House is that unicorn in Singapore’s food scene. In a city where diners demand choice, it focuses on just one dish. In this case, Ipoh chicken hor fun.
The dedication pays off because its only dish, priced at $7.80 (regular) or $8.80 (large), is perfection. The clear chicken and prawn broth is deeply flavourful without being too rich. It makes this dish, although the silky noodles have a delightful QQ texture and no one can fault the halved prawns and shredded chicken.
Nestled deep within a residential estate, in a little mall with lots of production kitchens and a handful of restaurants, the 18-seat restaurant has been in business for about two years. Most of that time, however, it was in a basement-level shop.
The owners – including two sisters originally from Ipoh – all have day jobs, and opened the place at the urging of friends who love their Ipoh hor fun. Go at lunch time or on weekends and you might have to cool your heels outside. The place is packed.
It is easy to see why people gravitate there. There are no bells and whistles. No extravagant toppings. Just a well-made bowl of hor fun full of oomph.
