SINGAPORE – In recent months, I have been back to Tras Street for some delicious meals – one-Michelin-starred Euphoria for its refreshed menu, and new restaurants Tonshou for charcoal-grilled tonkatsu and Latido for Colombian fare. 

Latido – Spanish for “heartbeat” – is helmed by Bogota-born chef-owner Fernando Arevalo, who previously ran fine-dining establishments Preludio and Bacata, hidden on the third floor of Frasers Tower in the Central Business District.

With Latido, he is taking the casual route in a much more visible street-level location in Tras Street and with an approachable a la carte menu. 

That means you can pop in for the signature housemade rye bread ($8); Bocados de Tiradito ($22), kueh pie tee shells filled with sawara (Spanish mackerel) ceviche and pops of lime; and the star dish of Pincho de Corazones ($22), perfectly grilled chicken heart skewers with a red wine and egg yolk sauce, served with Andes potatoes fried in duck fat. 

Of course, you can also go the whole hog with Lechonsita or suckling pig ($38 for 100g), paired with warm tortillas and pickled padron peppers; Arepan Conejo ($38), braised rabbit with bacon on cassava tortillas; and Sopa Langosta ($48), the chef’s spin on ajiaco, a Colombian potato soup elevated with lobster and studded with sweet corn and avocado.

Or opt for the Chef’s Choice, a guided experience with chef Arevalo’s recommendations of six to nine dishes for sharing, priced between $98 and $130 a person. 

Signature cocktails start at a pocket-friendly $9. The de-alcoholised wine ($13 a glass) from Spanish wine company Bodegas Torres is a refreshing first for me.

The restaurant is accentuated with beautiful art pieces – which are available for sale – sourced from Colombian artists. 

He has plans to roll out a Saturday brunch – starting from Jan 18 – with a farmer’s market element offering ingredients and crafts from indigenous communities and farms.
