SINGAPORE – When it comes to fish head curry, two names spring to mind – Muthu’s Curry and Banana Leaf Apolo.

The two South Indian eateries are synonymous with the spicy recipe unique to Singapore, where a huge snapper head with bulging eyes is simmered in a curry cooked with brinjal and ladies’ fingers.
