SINGAPORE - Trying to catch up with chef Damian D'Silva as he moves from one restaurant to another can be exhausting, but it is worth the effort.

In the past two decades, he has gone through at least seven establishments since he started his culinary career at Citrine Chocolat in Robinson Road in 2000. From there, he moved to Soul Kitchen in Purvis Street, where I first tried his cooking.
