SINGAPORE – Cold noodles, cold soup, salads – this is the time of year to trot out these cool dishes at meal times.
I love the Chinese genre of liang cai, little dishes usually served cold. They are intensely flavoured to revive heat-exhausted spirits, usually light to counter oppressive heat and include a hit of acidity to jolt people out of heat-induced stupor.
