SINGAPORE – Decker Barbecue is set to turn up the heat on Aug 7 at its new flagship restaurant at the Old Bukit Timah Fire Station. 

This is the second outlet of the home-grown American barbecue joint, which first opened in Robertson Quay in 2015 serving its signature wood-fired smoked meats. It was acquired by the PS.Gourmet Group – best known for its PS.Cafe chain – in July 2025. 

Decker Barbecue is the latest entrant at the Old Bukit Timah Fire Station, which was established in 1956 and functioned as a working fire station with firefighter quarters until it ceased operations in 2005. 

Decker Barbecue’s 4,000 sq ft spot – complete with iconic red doors – was previously occupied for nine years by the now-defunct Spruce restaurant, which shut in 2020.

It adds to the recently rejuvenated lifestyle destination, home to the likes of co-living space Coliwoo, The Sundowner Nature Experience Centre and swimming school aquaDucks. 

What’s on the menu

Taking centre stage in the 120-seat restaurant is a 14 ft, three-tonne smoker – resplendent in striking fire-engine red – that took four months to ship from Texas. 

The menu – about 70 per cent more than the original outlet’s – continues to showcase Decker Barbecue’s smoked meats, available for dinner (from 6pm) and on weekends and public holidays (from noon).

The build-your-own-platter section allows you to mix and match more than 10 types of smoked meats and 10 sides. Prices start at $40 for two meats and two sides to $288 for six meats, six sides, two appetisers and three desserts.

The meat selection includes the signature Wagyu Beef Brisket (add $5), Pork Spare Ribs, Chicken Thigh, Pulled Pork, Pork Belly Burnt Ends (add $4) and Sausages. 

Sides range from Mac & Cheese, Corny Cornbread, Burnt Pineapple to Kailan “Collard Greens”.  

For the ultimate show-stopper, the 14-inch Firehouse Dino Meat Pizza Pie ($88, Fridays to Sundays only) comes topped with a massive Dino Rib, sides and a sparkler for dramatic effect. The tender and juicy beef rib can be added to any platter for $60.

Brunch and lunch offerings

The brunch menu (8am to 4pm on weekends) offers classics with a “Southern-meets-Asian” accent. 

These include Shrimp & Grits ($26), creamy grits topped with prawns, soft-boiled egg and crispy youtiao – a nod to Cantonese congee; Smoked Mushrooms & Eggs ($24), where the wood-fired mushrooms are tossed in housemade mala oil; and Aloha Crispy Chicken Burger ($28), with fried chicken glazed with kaffir lime hot honey and grilled pineapple.

Take your meal to another level with the DIY sauce bar (available for dinner and brunch), which features more than 10 ingredients such as kicap manis, sesame paste and chilli padi. 

The lunch selection (11am to 3pm, Tuesdays to Fridays) offers hearty sandwiches, rice bowls and salads. 

Options include Brisket & Piccalilli Stack ($20), Rendang Brisket Rice Bowl ($20), and Bacon & Brisket Cinnamon Scroll ($8), a cinnamon roll made with rendered brisket fat, dusted with five-spice powder and laden with bacon bits, pecans and a cream cheese glaze.

Pair the food with a wide selection of beverages, including beer (from $10), cocktails (from $18) and other refreshing drinks (from $6). 

There are plans to open one more Decker Barbecue outlet in Singapore, says PS.Gourmet Group’s chief executive Michael Bovell, 40, who had the Old Bukit Timah Fire Station location in his sights for many years. 

He adds: “This new home gives us the space to do what we’ve always wanted: to build a true House of Low and Slow, anchored by fire, patience and craft. We’ve also brought in Asian creativity and local culture to make something that feels distinctively Singaporean.

“It’s a bigger space, a bigger menu and a bigger idea of what a barbecue destination can be; elevated but never pretentious.”
