The Philippine capital is shaking off its reputation as a springboard to other destinations

Hard-boiled eggs are not supposed to have veins or feathers. Yet I found myself holding one fearfully and swallowing balut, the fertilised duck-egg delicacy of the Philippines.

In a moment of foolhardiness when I set foot on Manila last month, I asked those on my Instagram account to vote on whether I should eat it - 77 per cent said yes.
