One spoonful of laksam and Bryan Koh was smitten.

The cookbook author, who runs cake businesses Chalk Farm and Milk Moons, was in Kuala Lumpur, dining with a family friend. The subtlety, nuance and care with which the Kelantanese dish of coconut fish noodles had been made prompted him to explore the food of the east coast of Malaysia.
