Ode to offal: Unloved spare parts of animals a great food pleasure

The unloved spare parts of animals are one of my greatest food pleasures

Unloved, unwanted, unappreciated. Dismissed as the "spare parts" of an animal. Prime cuts of meat are prized, but offal is not cherished.

I happen to love the stuff - hearts, livers, gizzards, tripe, lungs, blood, hoofs and other parts that some people will find off-putting.
