Regent Singapore executive sous-chef Angelo Ciccone and Basilico head chef Luca Beccalli draw inspiration from the mountains and seas of Italy with a different menu each quarter. The first quarter focuses on flavours from the Apennine Mountains. Try the squid ink risotto with cuttlefish and green pea ragout with shallot sauce or the roasted pigeon in parchment paper with seasonal roast-baked vegetable.

Chicken Rice Festival Buffet Comes Back To Town

Town Restaurant's Chicken Rice Festival Buffet is back for the third year. Lunch specials include the signature Hainanese Chicken Rice and local favourites such as ayam penyet with sweet Java chilli sauce and devil's curry, alongside a dessert buffet. The ayam buah keluak, nasi briyani and other local chicken dishes are available from the international dinner buffet spread. They can also be ordered a la carte at $26++ each.

Cassia, Capella Singapore's Chinese Restaurant

Inspired by the monkey's love of fruit, Cassia executive Chinese chef Lee Hiu Ngai has added shredded honeydew melon to this year's yu sheng platte. The Cassia Signature Yu Sheng platter is included in two Family Reunion Dinner menus. Huat Rock Burger Lo Hei At Hard Rock Cafe Sentosa

West Meets East With Roadhouse's Burger Yu Sheng

Roadhouse on Dempsey Hill has created a Burger Yu Sheng. Wagyu beef patty chunks are served with ingredients such as shredded cabbage, crispy onion fritters, chipotle, cheddar, fried pickles, jalapeno, bacon bits and pork floss. The beef is meant to be broken up and tossed together with the yu sheng.

Pineapple Tart And Mandarin Nectar Cocktails Paired With Spanish Suckling Pig At Catalunya

Ginseng Suckling Pig At Serenity

The cochinillo asado, a whole roasted suckling pig, is a signature dish at Serenity Spanish Bar And Restaurant. This Chinese New Year, it is offering a ginseng version. The suckling pig is usually brought to the table on a large wooden platter and cut into smaller pieces with a small plate. The piglet is marinated with sherry, white wine, vinegar and herbs and slowly roasted for more than six hours.

Zafferano's Italian Roast Duck

Zafferano has an Italian interpretation of another delicacy of this festive season - the traditional roast duck. The Challans duck is stuffed with garlic, onions, salt, pepper, rosemary, sage, thyme, orange and vanilla, then oven-baked to a crispy golden brown. The duck is flambeed in front of diners and presented in the middle of the table. The dish becomes a communal affair, with each duck meant for four people.

Swensen's Yu Sheng And Pineapple Upside Down Sundae

Swensen's Prosperity Yu Sheng With Smoked Salmon uses traditional ingredients such as carrot julienne, Chinese lettuce and Chinese celery, preserved cucumber, melon and ginger strips, shimeji mushrooms, crispy wanton skins and aromatic sesame seeds. Accompanying the dish is a concoction of crushed yuzu fruit and plum sauce, lemon juice and lime leaves. Try Swensen's Pineapple Upside Down Sundae, consisting of juicy pineapple rings atop a scoop of vanilla ice cream combined with strawberry toppings and finished off with crunchy biscuit crumbs.
