A Christmas Menu Of European And Japanese Culinary Influences By Chef Hide Yamamoto

The Japanese restaurant's 10-course menu with European and Japanese culinary influences starts with an appetiser of sashimi, followed by flambe tomato with rocket salad and croutons, which uses the French cooking technique to infuse the dish with additional aroma and flavour. That is followed by the signature chawanmushi, black truffle egg flan with fresh sea urchin and snow crab. Other dishes include abalone steak with liver and fresh seaweed sauce and grilled king crab with lime butter sauce and grilled lobster with sea urchin cream sauce.
