Min Jiang at Goodwood Park Hotel offers a set menu featuring signature dishes from the two Chinese regions. Diners can choose six courses from 24 dishes by chef Chan Hwan Kee. Sichuan items include camphor tea smoked duck fillet and drunken chicken Min Jiang-style. Cantonese dishes include deep-fried shelled prawn with salted egg yolk and braised crabmeat and fish maw soup.

Trevor Bird With $100Gourmet

The dining programme pairs up Trevor Bird, chef-owner of farm-to-table restaurant Fable in Vancouver, with two Singapore-based talents: chef Daniele Sarno of Pontini (Sept 26 - 28), for an Italian- influenced menu of items such as freeform ricotta and mushroom lasagna with porcini foam and freshly shaved truffles; and chef Anthony Yeoh of Cocotte (Sept 30 - Oct 3), with a more French-inflected menu with dishes such as fresh pasta with parmesan foam topped with a duck meatball with a liquid centre of Madeira and red wine sauce. $100Gourmet also has a promotion: a three-course lunch at $100++ for two guests, with payment by a Citibank credit card, valid for chef Bird's collaborations on Sept 28 at Pontini and Oct 1 at Cocotte.
