Following on from their previous Gangsta Trolley Brunch, chef Anthony Yeoh from Cocotte and chef Bjorn Shen from Artichoke join forces again for a sequel, held at Artichoke. Only two nights will be dedicated to their respective takes on crispy fried chicken, served free-flow. Artichoke's shish taouk fried chicken, and Cocotte's crispy confit chicken wings, served with accompaniments such as kebab shop sauce, roast chicken gravy, lardon aioli and Lebanese garlic toum sauce, plus side dishes such as Cocotte's Tartiflette potato gratin with Reblochon cheese, onions and French bacon, and Artichoke's Lebanese Slaw, spiked with caraway, raisins and almonds. To celebrate its fifth anniversary, Shinji By Kanesaka presents an omakase dinner specially curated by chef Koichiro Oshino. Guest chef Charles Feng from Mandarin Oriental Pudong, Shanghai, brings his signature dishes to Cherry Garden next month. Incorporating influences from neighbouring provinces Jiangsu and Zhejiang, Shanghai cuisine emphasises aromas, delicately balanced flavours and colourful presentation. Among the highlights are chilled appetisers such as marinated chicken with aged yellow wine; minced cod fillet soup with black fungus and mung bean vermicelli; braised pork and eight-head abalone with premium soy sauce; sauteed river shrimp with snap peas; citrus-glazed fish fillet with roasted pine nuts; crisp Chinese pak choy stuffed with shrimp mousse and bean curd; eight treasures tea with glutinous rice dumplings. To celebrate the steakhouse chain's 16th anniversary in Singapore, executive chef Nick Lee has created a five-course set dinner (July 1 - 16, $99++ a person) which includes dishes such as 7 Spices Duck with carrot meringue and horseradish cream; Surf & Turf lobster and chicken in tomato broth; and main courses such as the Duo Deluxe, pan-seared United States Prime beef tenderloin and French goose foie gras served with mango salsa on toast. Slow Food (Singapore), the only Slow Food Convivium in Singapore officially authorised by the Slow Food International Association, presents the inaugural Kueh Appreciation Day 2015, a Fringe Event at this year's Singapore Food Festival, celebrating favourite local confections and snacks. The public will be able to purchase handmade heritage food by vendors from Singapore's different ethnic communities. Mary's Kafe will be selling Eurasian goodies such as Pang Susie, sugee cake, pulot tekan, coconut candies and tepong manis; from HarriAnn's, Peranakan items such as ondeh ondeh, kueh kosui and lapis sagu; from Hainan Xiaochi, Hainanese treats such as yi buah, sticky rice kueh with shredded coconut, sesame and peanuts; from Ji Xiang, assorted Hokkien ang ku kueh; from Kuehs and Snacks, Teochew ang ku kueh, soon kueh and png kueh; and from Chat Masala, Indian tidbits such as Keralan unni appam made with rice flour, jaggery and banana, putu mayam, jalebi and murukku. Brizo at Park Hotel Clarke Quay launches Taste Of Singapura, a nostalgic dinner buffet, coupled with fun family bonding social media activities. The American-style restaurant specialising in burgers, wings and bar beverages has curated two Singapore-inspired dishes to celebrate SG50. The Chilli Crab Wings ($18.90+) are deboned fresh chicken wings stuffed with crabmeat, fried and dressed with BWB's signature chilli crab sauce, while the Tiger Prawn Otak Otak Burger ($17.50+) features an otak patty made with premium mackerel and chunky whole tiger prawns, clasped in a sesame brioche bun with streaky bacon, sunny-side-up egg, lettuce, cheddar cheese and curry aioli sauce.

As part of the Tourism Authority of Thailand's campaign 2015 Discover Thainess, Patara Fine Thai Cuisine welcomes diners to explore the diversity of regional Thai flavours in new and lesser-known dishes. The menu is a collaboration with Iron Chef Chumpol Jangprai (above), noted chef, TV personality and managing director of MSC Thai Culinary School. Dishes include Yum Hua Plee Goong Pao, spicy banana blossom salad with grilled tiger prawns, from central Thailand; Koi Pla Tuna, spicy tuna tartare salad in Thai style herb dressing, from the north-eastern Esarn region; Tom Som Pla Krabok, sweet and sour soup with mullet, with a balanced flavour from pepper, shallots, ginger, chilli, shrimp paste, fish sauce, palm sugar and tamarind; Pad Prik Khing Pla Yang, stir-fried black cod with red curry paste and long beans, a favourite dish of Thai nobility; and Nam Prik Pla Tu - enjoyed in both royal and common households - mackerel and baby eggplant chilli relish with chili, garlic, palm sugar, fish sauce and shrimp paste, served with raw vegetables and acacia leaf omelette.

From next month to September, Asahi Super Dry presents a series of exclusive collaborative menus created by three Japanese eateries, offering flavours and dishes to complement the beer's signature karakuchi (clean, crisp and refreshing) taste. Next month, Katanashi An restaurant offers a five-course beer-pairing menu (July 1 - 31, $50++ a person) with dishes such as beef tataki with garlic teriyaki sauce, deep-fried tuna cutlet with homemade wasabi tartar sauce and ichiyadori chicken with yuzu pepper from Fukuoka. In August, Boruto restaurant's four-course pairing menu (Aug 1 - 31, $75++ a person) focuses on deep-fried items such as bacon-wrapped Hokkaido scallops, boneless chicken wings stuffed with minced pork and vegetables, tom yum-marinated pork belly and a tempura rice bowl with seaweed, shiso leaf and chilli. In September, an eight-course omakase menu at E.Pachi (Sept 1 - 30, $100++ a person) harnesses seasonal produce in dishes such as raw Kyushu beef sashimi garnished with spring onions and sesame, pumpkin broth with zucchini and sakura flowers, a Season's Best Chef's Selection sashimi and sushi platter, and butter-poached asari clams with konyaku, broad beans and dried chilli. Each menu will be accompanied by two pints of Asahi Super Dry.
