Chef Andre Chiang of nouvelle French restaurant Restaurant Andre in Bukit Pasoh will be opening a new restaurant in Taipei in November.
Named Raw, the 56-seat restaurant will focus on new intepretations of Taiwanese flavours and the use of seasonal local produce.
This comes shortly after the chef's first overseas venture, Porte 12 in Paris, which officially opened yesterday (Sept 16).
Raw is a collaboration between the chef and the Hasmore Restaurant Group, a publicly listed company that is behind restaurants including popular steakhouse chain Ruth's Chris in cities such as Taipei, Hong Kong, Tokyo and Singapore.
It draws inspiration from the bistronomy movement, where fine dining techniques and quality ingredients are combined with down-to-earth pricing and presented in a relaxed but refined atmosphere. Expect a modern, Northern European-style interior.
The restaurant will also offer biodynamic wines both by the bottle and carafe; a selection of Nordic tea and coffee; and Brooklyn-style cocktails.
Lunch is priced at about TWD850 (S$35.60) a person, while dinner will cost about TWD1850 (S$77.50) a person.
