My foodie journey through the new hawker centres continues this week at the Marsiling Mall Hawker Centre.

It opened last month and houses many hawkers who were formerly at the Old Woodlands Town Centre near the Woodlands Checkpoint.

One of the favourites, Fu Shi Traditional Roasted - Wanton Mee, is not to be missed.

I prefer to eat wonton mee from stalls that sell roast meats because you have a better chance of getting good char siew.

Indeed, the char siew is the highlight of the wonton mee ($3.50) from Fu Shi Traditional Roasted - Wanton Mee.

It does not have an alarming red hue, but a darker, caramelised glaze. While the meat is generally lean, it is tender and there are some pieces that have a small amount of fat which I gleefully savour.

The noodles also come with the standard three wontons in a separate bowl of soup, but they are nothing to scream about. However, I do enjoy the piquant chilli sauce that the noodles are tossed in. Plus, there are a few cubes of lard.

I make a note to ask for extra chilli sauce next time and, more importantly, fattier cuts of char siew that have a perfectly charred exterior. I am told customers can request that at no additional cost, subject to availability.

The stall also sells roast pork and roast duck. Each dish of meat with rice costs $4. The crackling on the roast pork is fairly thick, but crispy.

The duck is on the fatty side, but the meat is tender and juicy.

Next on my hawker trek is the four-day-old Pasir Ris Central Hawker Centre. Watch for my next column to see what I discover.
