Take your pick of festive buffet spreads this month of Ramadan, some of which come with a view, like Hilton Singapore’s pop-up rooftop restaurant, or feature a barbecue like the one at Carousel.

Highlights of the Ramadan buffet at Kintamani Indonesian Restaurant includes Chilli Crab, Lemang Serunding (glutinous rice with spiced grated coconut), roasted meats such as grilled leg of lamb and chicken shawarma.
The restaurant’s Ramadan Takeaway Set is back. It serves four people with six dishes, a dessert and drinks. Each set includes Beef Rendang, Chef’s Speciality Chicken, Deep-fried Fish Fillet, Vegetable Dish of the Day, Chilli Anchovies and Peanuts and rice.
Dessert is Traditional Rice Pudding with Palm Sugar.

Azur at the Crowne Plaza Changi Airport has a buka puasa buffet spread with Asian and Western cuisine.
Among the Western offerings are Seafood Paella and Satay-marinated Australian Beef Short Ribs while highlights at the Asian station include Lamb Slab Biryani.
End dinner with confections with a local twist such as teh tarik Tiramisu and Chilli Crab Ice Cream.

The key highlight of the Iftar Buffet Dinner at Straits Kitchen is its Date Bazaar section, a showcase of dates from different countries.
For savoury items, look out for the Arabic Mixed Grill of chicken, lamb and beef, as well as Ouzi slow-cooked Arabic spiced lamb shanks.
There is also a rotating selection of Chinese, Indian, Malay and Peranakan dishes.

ICONIC INDONESIAN FARE
Feast on authentic Rendang Padang, Gado Gado, Ayam Betutu, Sate Lilit and Nasi Goreng Kampung at AquaMarine in Marina Mandarin.
It has collaborated with airline Garuda Indonesia to present a special Ramadan Dinner Buffet. The guest chef is Vindex Tengker, the airline’s vice-president of in-flight services. He is a chef and former television culinary personality.
Tuck into Kampung-style Slow Braised Leg of Lamb, which is simmered for 16 hours; and Ayam Penyet, spring chicken that is deep-fried and freshly “smashed” at the live station.
On Fridays and Saturdays, Middle Eastern Roasted Whole Baby Lamb with Mint Yoghurt, Spicy Tomato Salsa and Chilli Dip takes centrestage. More than 20 ingredients go into its preparation.

BUFFET WITH A VIEW
Expect a spread of more than 90 dishes, including Roasted Baby Lamb, Ayam Masak Merah and Udang Balado at Hilton Singapore’s halal-certified Iftar Buffet.
At the pop-up restaurant on the rooftop, diners can soak in beautiful sunset views from the hotel’s 24th level.
There are live stations, including new ones like the Ramly burger station. The ice-cream station features local flavours like Teh Tarik.

Break fast with barbecued dishes at Carousel, which is offering a buffet themed “Best of BBQ with Mediterranean and Asian offerings”.
Highlights include Applewood Smoked Barbecue Beef Ribs and Thai Barbecue Stuffed Squid with Spicy Dipping Sauce.
There is also a special Turkish spread of appetisers and desserts such as Makarna Salatasi (macaroni salad), Patlican Salatasi (eggplant with yoghurt) and Baklava (pistachio puff).

AUTHENTIC MALAY CUISINE
Breez Bistro at the Grand Mercure Singapore Roxy has a rotating selection of dishes for its Ramadan dinner buffet.
Taste traditional Malay classics such as satay and tahu goreng. There are also Asian dishes such as chicken tom yam.
On weekends, the buffet highlight is the carving station which features roasted lamb leg.

Ikea Tampines is offering value-for-money break fast specials. Its halal line features a different festive dish each week. The sets include the the Satay Chicken Set (tomorrow to May 27).
