Indigo Blue Kitchen may not be helmed by a Peranakan chef, but the dishes, based on family recipes, are nevertheless authentic
Indigo Blue Kitchen, the new Peranakan restaurant by the Les Amis Group, is a bold gamble on the part of Mr Desmond Lim, the group's chairman.
The chef of the three-week-old eatery is 28-year-old Chong Jun Xiang, who is not Peranakan and has never run a Peranakan kitchen.
