SINGAPORE – Over the past six months, there has been much ado about everything mochi – that sticky Japanese rice cake made of sweet glutinous rice. 

Usually filled with fruit or stuffed with red bean paste (also known as daifuku), it is a popular addition to desserts and bakes for its soft yet chewy texture.
