New eateries go local with crocodile meat and other ingredients

SINGAPORE - Crocodiles loom large on the menus of two recently opened food establishments that showcase small local producers.

Private-dining outfit People Table Tales and omakase restaurant Maison Shuko get the meat from Long Kuang Hung Crocodile Farm in Kranji. Here, the animals are farmed for their skin, but their meat is not widely used other than at a few Chinese restaurants.
