DB Bistro Moderne goes Mediterranean with new executive chef


Expect new Mediterranean-influenced dishes at French casual restaurant DB Bistro Moderne at Marina Bay Sands. Its renowned owner, French celebrity chef Daniel Boulud, is in town to work on the menu with a new chef.

The 57-year-old - who, when he first set up the bistro, pledged to return to Singapore frequently - will be in the kitchen this week with the restaurant's new executive chef Jonathan Kinsella, who is just three weeks into the job here.

The Ohio-born 33-year-old, who has been working for Boulud since 2010 at his restaurants in New York and Manhattan, says: "I've always wanted to work in Asia, and Singapore is a great place to be. The menu, while retaining the classic dishes that diners love, will feature more Provencal cuisine. Instead of butter, we will use more olive oil for a lighter touch." Provence is a region in the south-east of France.

Both chefs will be present at this weekend's inaugural Epicurean Market food festival at the Sands Expo, where diners can get a taste of DB Bistro Moderne's dishes. Boulud will also be conducting a masterclass.
