Melon skin and ginger porridge

INGREDIENTS

• 30g fresh melon skin

• 10g ginger, sliced

• 10g carrots, sliced

• 300g rice

• Water, as needed

METHOD

Prepare the melon skin soup by boiling the skin in water for 30 minutes. Discard the melon skin.

In a claypot or slow cooker, add the soup, ginger, carrots and rice.

Bring the water to a boil over high heat, then turn down heat and let it simmer for 30 minutes or until the rice turns to porridge.

SERVES TWO

Note: This porridge aids in weight management by nourishing the spleen qi and promoting urination.
