Dolce Vita's Earth Hour Menu

Mandarin Oriental Singapore's Dolce Vita will mark Earth Hour on March 19 with a "dine in the dark" menu. With restaurant lighting reduced to a minimum, the menu features Caledonia prawns and quinoa in shellfish broth; organic Singaporean barramundi served with crispy potatoes and micro greens salad; and Irish beef tenderloin with pumpkin puree, baby fennel and natural jus.

Curing Food With Spirits

Chef Drew Nocente will demonstrate how to cure and prepare meats through three dishes: mackerel in gin, pork in rum and halibut in vodka.
