Reunion Dinner For Large Groups At The Ritz-Carlton, Millenia Singapore

The new Summer Pavilion has six private dining rooms suitable for extended family reunions of up to 30 guests. In its signature chilled sea whelk and salmon caviar yusheng, the sea whelk is braised in an abalone sauce, while the salmon caviar adds flavour to the julienned salad. Available for both dine-in and takeaway, the yusheng is priced at $138++ (for four to six people) and $276++ (eight to 10 people). Fort by Maison Ikkoku's four-course Chinese New Year menu starts with Joyous Treasure, a dish of pan-seared Hokkaido scallop, seaweed and a heap of black and golden roe finished with a sprinkle of edible gold flakes. This is paired with Jubilant Festivity, a sake infused with lemongrass. The next course, Bountiful Harvest, is executive chef Ethan Leslie Leong's version of the traditional roast goose. Sea Of Fortune comprises a salmon steak with a dollop of briny salmon roe, green apples, grapefruit and passionfruit. End the meal with Golden Royale, a citrus sorbet dessert.

Besides set menus for the occasion, Mitzo has come up with Chinese New Year cocktails at $20++ each: Mandarin Mojito, a version of the usual mojito comprising Havana Club, Apricot Liqueur, Angostura bitters and Mandarin orange wedges; and Spring Elixir, made from a blend of red dates-infused gin with Campari, red vermouth, goji berry syrup and honey dates served atop ice and dusted with a fine layer of edible gold. The Prosperity Delights set ($188++ a person for four or more people) comprises double-boiled fish maw soup with cordyceps and pork ribs; wagyu beef with asparagus in curry leaf; sea cucumber with dried oyster, flower mushroom and seasonal greens in oyster sauce; and ee-fu noodles with crab-meat topping. Dessert is dual cream of sweet potato served with golden pineapple bag (Mitzo's pineapple tarts). The Auspicious Harvest set (for 10 people) has kingfish yusheng, braised lobster in Maotai wine, sea cucumber with three-head abalone, dried oyster, flower mushroom and seasonal greens; stir-fried chicken with mushroom in 20-year hua diao, and Mitzo's Koi Fish Nian Gao.
