Boulevard Fire And Sake Ramen At Shin-Sapporo Ramen

Ramen lovers can order Shin- Sapporo's dramatic new Fire Ramen ($15.80++, advance reservations recommended). Hot garlic oil is lit and poured into a bowl of Hakata noodles in pork-bone broth, forming a column of fire. Also, Sake Ramen specials return, including Tonkotsu Sake Ramen ($15.80++), made with a customisable level of sake. Tien Court

Chef Ho Tien Tsai and team unveil a new a la carte menu centred on authentic Cantonese creations, plus a selection of Sichuan specialities. Among the highlights are braised fish maw rolls with seafood paste in crab roe sauce; sauteed prawns with egg white and truffle oil; and fragrant wok-fried rice with scallops, olive pickles and salted egg yolk.
