Must-tries include Spaghetti Carbonara di Mare, laced with salted mullet roe, egg, cream, caviar, black pepper, and parmesan; Tonno alle Erbe, pan-seared yellowfin tuna with broccoli flan and red onion; and Brasato di Manzo, 48-hour slow- cooked beef short ribs served with polenta, spinach, mushrooms, a port wine reduction and a quail egg.
