SINGAPORE - Eleven new restaurants were awarded one Michelin star at a glitzy gala for the Singapore Michelin Guide held on Thursday (June 29) at The Fullerton Hotel.
Waku Ghin, by celebrity chef Tetsuya Wakuda, was bumped up to two stars while Joel Robouchon Restaurant remained the only three-starred establishment in Singapore.

ONE MICHELIN STAR
1. ALMA BY JUAN AMADOR, GOODWOOD PARK HOTEL

Signature dish: Wagyu Au Poivre Vert - Australian Blackmore wagyu striploin is gently cooked in a combination of beef jus and wagyu fat. It is then grilled and smoked, and served with a concentrated ginger and pepper infused beef glaze, Chinese mustard gremolata and an assortment of pepper berries, including the seasonal sansho pepper from Japan.

Signature dish: Memory 1997 - warm foie gras jelly with black truffle coulis. This was Chef Andre’s first creation in France, 1997 and it is a dish he feels embodies his culinary style. Since then, Chef Andre has cooked this foie gras/truffle dish for every dinner service, because he says: “This is not only a signature dish of Restaurant Andre, but also a meaningful dish that reminds me where I started, how I started almost 20 years ago.”

Signature dish: Marinated Botan Shrimp with Sea Urchin and Caviar - A botan shrimp from Japan is topped with sea urchin. The two are bound with a bit of barely-cooked egg yolk. On top is a generous scoop of Oscietra caviar and the dish is served in a hollowed-out sea urchin shell.

The dish is also served with pommes soufflées which are puffy slices of deep-fried potato. It takes five hours to prepare this dish.
