SINGAPORE - At The Banana Leaf Apolo in Race Course Road, which serves both South and North Indian cuisines, dishes are still made from scratch.
This video highlights three of the restaurant's signature dishes: Fish Head Curry, Mutton Mysore, and Chicken Masala.
The fish head curry, for example, is made with a blend of spices that include fennel, cumin, cinnamon and fenugreek, as well as chilli powder, ground turmeric, and garam masala.
