Lauded three-Michelin-starred British chef Heston Blumenthal will be opening his famed restaurant The Fat Duck in Melbourne, Australia, on Feb 3 next year. This is The Fat Duck's first permanent restaurant outside of Britain.

It will be located at Melbourne's Crown Tower Resorts, which links to Crown Casino. The complex also houses other renowned restaurants including Nobu by famed Japanese chef Nobu Matsuhisa, and popular Australian chef Neil Perry's Rockpool Bar & Grill and Spice Temple.

Blumenthal is best known for his creative and multi-sensory dishes. Some of his iconic dishes include the Sounds Of The Sea, an unorthodox dish that incorporates listening to music from an iPod.

The Fat Duck in Bray, in the UK, which closes in the winter, will relocate to Melbourne for six months, from February to August 2015, after which the team moves back to Bray.

Go to www.thefatduckmelbourne.com to make a ballot for a reservation. There will also be a standby list for those keen to be notified of any last minute cancellations.

Ballot entries will be accepted from 9am on Oct 8, to midnight on Oct 26 (Australian Eastern Daylight Time - three hours ahead of Singapore time). Only one ballot will be counted. Whether someone is the first or last to register their ballot entry during the open registration period will have no bearing on the outcome.

The Fat Duck Melbourne will be open for lunch and dinner, Tuesdays to Saturdays, from Feb 3, 2015. The last meal service will be dinner on Aug 15, 2015. Meals are priced at AU$525 (S$597) a person.
