Michelin-starred chef's vegetable obsession

Ask chef Alain Passard what it is about vegetables that he finds so intriguing and he will tell you it is because with vegetables, the possibilities are endless.

From bursts of colour, to various textures and flavours, vegetables inject a certain vibrancy into his dishes that meat cannot, he says.

The chef is behind the famed three-Michelin-starred L'Arpege in Paris, known for its exquisite and artistic use of vegetables, sourced from Passard's three gardens outside the city.

He was last in town in March for Savour, a multi-chef gourmet food event, and is back in town to showcase his cuisine at The Sentosa from tonight till Sunday.
