Yusheng is the one staple during Chinese New Year that no family can do without.

Every year, in the lead up to the new year and over the entire 15 days of festivities, diners usually gather around the table, standing up to "toss" this auspicious raw fish salad with chopsticks.

Of course, no lo hei or tossing session is complete without loud prosperity ramblings of "Huat ah!".

This year, welcome the Year of the Snake with all types of yusheng, from ones topped with luxe seafood of geoduck and lobster, to ones made with fruit, seaweed and roast meats.
