Move over soupy steamboat, there is a new hotpot craze in town.

A dish popular in Chongqing and Shenzhen, China, for its thick and flavourful soy-based gravy with herbs and spices, it is finding fans among China nationals, tourists and locals alike.

No fewer than five eateries here feature this hotpot as their signature item, and they also offer other meats such as duck and frog. Diners can also help themselves to side dishes of vegetables, tofu or mushrooms, at $3 a plate.

Another popular Sichuan-style hotpot item from Chong Qing is grilled fish simmering in gravy and served in a hot metal pan.
