Go green with French chef David Toutain

He is one of France's rising culinary stars, known for his seasonal, minimalist cuisine at his restaurant Agape Substance. But French chef David Toutain never intended to have a career in kitchens.

He says: "I did not know what to do with myself and since my friend was going into cooking school, I just followed him. Everything changed when I worked at Le Manoir du Lys hotel, which is in a forest in a French town.

"We would go out to pick our produce and I was trained under such strict precision. For once, food made sense to me."

The 31-year-old Normandy-born Toutain is in town for the annual Chefs With Altitude dining series at Swissotel The Stamford, which runs till Sunday.
