Sabio By The Sea is quite different from the original Sabio in Duxton Hill. Unlike that narrow tapas bar that often gets crammed and noisy in the evenings, the new eatery in Sentosa Cove is large, airy and relaxed with alfresco tables where dogs are allowed.
The menu here is bigger too, with a selection of main dishes cooked in a Josper oven which uses charcoal. The smokey flavour of the charcoal gives dishes such as grilled ribeye and herbs marinated pork shoulder a lovely aroma.
A favourite dish is the grilled octopus leg, which is very tender and delicous with the accompanying mashed blue potato and paprika sauce.
Other dishes, such as razor clams with chorizo and garlic sauce, disappoint because the seafood is overcooked.
